Eggplant and chicken parm are more great alternatives. They are classic Italian dishes that you will find at pizza restaurants. The eggplant and chicken have no gluten. If you are super sensitive, you might ask that the eggplant or chicken not be breaded, as the coating of breadcrumbs is the only thing that will have a slight amount of gluten.
